My own personal favorite is to take cold cooked chicken, run it through my food processor until it's shredded rather fine. Add miracle whip (salad dressing) to the right consistency for the amount of chicken I'm using and then add dried dill weed. Yummy!

I like small diced dark... or light meat... real mayonnaise....
something for texture... celery, water chestnuts...
something for color sliced olives...
minced dried tomatoes...
and then to vary the flavors... capers... lemon juice & cumin.....
or curry is another possible choice...
Open the cupboard... look around and experiment!
