Tasty meat loaf

1 lb hamberger
1 can veg beef soup
1 egg
1/2 cup parmesian cheese
1/2 cup italian bread crumbs
Mix everything together in a bowl. Put in a pan sprayed with pam. Spread more parmesian cheese on the top. Bake in a 325 degree over for about an hour Serve with baked potatos and green beans.
If you have a lot of people double or triple the amount and bake longer.
This was always one of our favorites. It's easy to make and little to clean after

Another tip - I used ground turkey, not just in meatloaf but in nearly anything that calls for beef (chili, meatballs, tacos, burgers, etc).

For me, I would classify a meat loaf as a comfort food - and more for such moment for such a thing - rather than a regular thing. And I know there must be millions of different recipes for a meat loaf - whether a family favorite, or something new to try..

Of course I like to put my own twist on many things.. Just one of mine is that instead of bread crumbs in a meat loaf, I like to use plenty of whole old fashioned oats..

A secret ingredient I have for a meat loaf is at least 3 large carrots shredded with a vegetable peeler or a shredder.. And more than 3 carrots is just fine too.. And when you can get them - fresh carrots that you buy with the tops still attached just taste so much better than storage carrots in the plastic bag. The carrots will cook down though, and nobody would ever really know they are in there - if you didn't tell them - but carrots just go really well with beef like in a meat loaf..

Shredded carrots are also a secret ingredient for me in a spaghetti sauce, and most especially in a marinara sauce.. Same thing though - at least 3 large carrots shredded - and more is just fine too. Some people like to put a little sugar in a spaghetti or a marinara sauce, to take the edge off of the acid from the tomatoes. The carrots provide that sugar, but if you ask me just compliment the sauce well. And carrots are better for us than refined sugar any day.. The carrots will cook down to nothing if you cook your sauce slow for a fairly long time. And again - nobody would ever know they are in there if you didn't tell them..

I also like to saute a good amount of diced onions before I add them to the meat loaf too. I do take them past clear to just starting to brown - to bring out a better flavor, and the sugars in the onions - but I don't take them to any sort of deeper brown at all. They will cook more in the meat loaf anyway. And if I'm not adding a course ground garlic to the meat loaf, I will roast some garlic fairly well before adding it to the meat loaf.

Most everyone does add an egg or two to help bind the meat loaf - except me...lol And many meat loaf recipes call for a topping of tomato sauce before baking. But I think a nice thick layer of Heinz's ketchup is an ever better topping for a recipe calling for a topping of tomato sauce.. Of course there will be some spices in the ketchup, but the main reason many people like ketchup - is the vinegar in it..

Although I haven't tried it for a meat loaf yet - I don't do meat loaf very often anyway - but I will agree that ground turkey can do really well as a replacement for beef in many things that beef might traditionally be used for. And it seems to me that the right spices and/or seasonings can go a long way in helping that too..

I'm just not a big red meat eater, and I suppose for many people a more inexpensive plain ground beef is traditionally what is used in a meat loaf. But for someone deserving - they may prefer the flavor of ground chuck instead. And an Angus Beef ground chuck may provide an even better flavor for someone that really likes beef.. Ground chuck is a full 20% fat though..
