We have a restaurant up here in Canada called "Montana's".. I'm not sure if you have it down in the US or not? Haven't seen one.
They make THE BEST cornbread in the whole world and every time I try to google a recipe for it...it talks about stuff that doesnt make sense that would go into it?
Anyone have any recipes? I could LIVE on this stuff it tastes so good. Almost like a muffin or a sweet bread

Well,what I do to make mines sweet is just throw some sugar in there.I also use two eggs instead of one like it says on the box.I use Jiffy,nothing from scratch,lol

My grandmother passed on one that we have made in our family for more than 40 years closer to 50 I think. It is unusual in the respect that after cooking it has a custard layer just under the top crust.
johnny cake
mix together 1 cup sour milk, 1 cup sweet milk, 2/3 cup sugar, 1 1/3 cup corn meal, 1/2 cup flour, 1 tsp baking soda, 1/4 tsp salt, 2 eggs, 2 tblspoons shortening. after pouring into 8x8 greased pan gently pour 1 cup of sweet milk over the top, do not stir!!!!!!! Bake in 350 degree oven being careful not to overbake.
this recipe comes from an age when they didn't have temputures on the stoves, and thus no accurate time to bake. We always baked at 350 degrees, being careful not to overbake so that the custard layer is there.

I would check it after 30 minutes and keep checking every 5-10 minutes. i havent' made it in a few years. Being single and alone can make your cooking skills go downhill sometimes. I trained to be a cook, but now can't stand to cook for just myself.

I have an incredible recipe, I will try to find it and you can have it - you actually use cream corn in it to help make it stay nice and moist!!

Here it is nawti, I think if you try this one you'll like it. I did not use any sugar so if it is not sweet enough for you then add about a 1/4 cup sugar each time you make it till you get it how you like it.
3 ~ large eggs 1/2 ~ cup canola oil or vegetable oil 1 ~ teaspoon salt 8 ~ ounces creamed corn 1 ~ cup sour cream (I use reduced fat) 1 1/2 ~ boxes Jiffy corn muffin mix
1. Lightly grease a 13"X9" pan. 2. Preheat your oven to 375 F degrees. 3. Beat eggs until light, then add the oil and the salt. 4. Continue to mix this together and add the creamed corn, the sour cream and finally, the muffin mix. 5. Pour mixture into the prepared pan and place in the oven. 6. Bake for 35 minutes.
You can also add extra taste to the recipe using some of the following if you wish: 1 small can diced (and drained) green chilies, 1/2-3/4 cup grated cheese (Monterey Jack or medium cheddar work well).

My recipe sounds similar to Swyter, with the cream corn, but I use actual cornmeal, not a mix - Im from Canada here so i have actually never heard of that Jiffy stuff LOL

Oh,and another thing my mom or dad does is if you want a crispy crust on the outside...preheat the pan with some butter in it and put the batter in the hot pan and bake as usual....so damn good.

What ever recipe you use, cornbread is made in a cast iron skillet in the oven. But you must render some bacon in it first to preheat it, plus you use the bacon grease instead of oil in the cornbread recipe. Save the bacon for other stuff like salads.
