On a whim I decided to buy some sweet potatoes from the market and as of now their sitting in the fridge waiting on me.Has anyone made them before?Is there anything special to cooking them?I tried looking for recipe tips,but I want to know from a real persons point of view.

No different than making regular fries homemade. Cut em up and fry them...enjoy!

I know it can't be that easy,lol sweet potatoes have more sugar than regular ones and they will burn easy so there has to be a special way or something

Actually no, Luna.. it's exactly the same way as a regular potato. Just pay attention they don't get too browned.. if you run the grease too hot though they may not cook all the way through... cuz they are denser. You can nuke em for about a minute and half if you wanna before droppin em in the grease too.

Huh, Emeril says to boil them whole for ten minutes first .. let them cool and then slice them..that would make slicing those buggers easier for sure.

I don't do a lot of frying, so I make baked sweet potato fries. Just peel, cut up to whatever size you want (although you don't want them too thin or they will burn). I like to cut mine like cottage fries. Toss in a bit of olive oil, spread out in one layer on a baking sheet, and bake for about 10-15 minutes on about 350F or so (check your oven temp so they don't burn). My oven's a bit wacky, so I have to wing it. Keep checking them, and when they seem crisp enough on the bottom, carefully turn them over, and bake for another 10 minutes or so. I apologize for not being exact--very rarely do I follow a real recipe. Once the fries are crispy, remove to paper towels, and sprinkle with coarse salt and fresh (or coarse) ground pepper. Hmm...may have to stop by the store tomorrow night on the way home from work! Hope this works for you.

You don't. You go to the Blue Donkey,a dive bar, and order them along with one corn dog, on Amsterdam Avenue btw. W. 83 & W. 84 Sts. NYC.
