So now that you have all the leftover turkey, stuffing/dressing, sweet potatoes, mashed potatoes, creamed onions, cranberry sauce, gravy, pie etc.........what do you do with all that? Anyone get creative and go beyond just reheating the same dinner or making sandwiches?
I like to make a pseudo-shepherd's pie or potpie - cut the turkey into bite size pieces, same with the veggies.......put it all in a baking dish........drizzle a little gravy......then cover with a layer of sweet potato......bake about 20 mins on 350.
Left over pumpkin pie.......I'll scoop out the filling from a slice and mix it in to hot oatmeal.........or mix the filling with cream cheese and spread it on a bagel.

Turkey Nachos with Cranberry Salsa
Shred the turkey and layer over tortilla chips..........sprinkle shredded cheese over the turkey (I like colby jack) - bake til cheese melts
For the salsa.....the jellied stuff in a can won't work..........use plain cranberry sauce to dip the chips........combine with pre-made salsa.......or add your own onions, jalapenos, seasonings

Turkey biscuits
Dice up a cup of turkey mix in with regular buscuit dough ( scratch dough) and some colby or cheddar cheese and bake as usual
I then spread some cranberry relish over the top after I slather on the butter

I like to make Thanksgiving subs or sandwiches. Using the turkey, stuffing, mashed taters, cranberry, and gravy on a sub roll or bread! mmmmmmmmmmm

spunky did you ever here about sharing, I ate at my son's house for thanksgiving and didn't take any leftovers. I do like turkey sandwiches and shepards pie I can make a mean turkey soup though. tough to cook for one person on thankgiving but I can cook for more people especially a red head.
