Bake a large potato in a oven until skin is crispy. Fry a few(as many as you like) bacon rashers and slice into small peices. When the potatoe is baked chop in half and take out the potato so you have 2 empty potato skins. Mix the potato with the bacon and fill the skins. Cover with you fav cheese(peppers herbs etc.....i use onion in mine also but its up to you)then place back in oven or under a grill until the cheese is golden. then enjoy!

try the same thing with Yams or Sweet' taters also add just a small dab of sour cream to the mix makes it hold together better
