Grab a fork guys...
For the crust: 1 1/2 C crushed gingersnaps (about 40 cookies) 1/4 C ground pecans 2T powdered sugar half a stick of butter or margerine, melted
Mix gingersnaps, pecans and powdered sugar. Toss with melted margerine. Press into a 9 or 10 inch pie plate. Refrigerate 20 minutes while you make the filling.
1/4C caramel ice cream topping 1/2 C chopped pecans
Pour ice cream topping into the bottom of the crust, top with pecans. (Wait to do this until after the crust has cooled for at least 20 minutes... otherwise you get a soggy crust)
Filling: 1 8 ounce package cream cheese 1 can Sweetened Condensed milk (NOT evaporated milk) 2/3C lemon juice
Beat together until smooth and creamy. Pour into crust. Refrigerate at least 2 hours.
Topping: 1 can Apple pie filling 2T caramel ice cream topping 1/4 C chopped pecans
Mix together and place on top of the cream cheese filling. return to the refrigerator for an hour. Garnish with a pecan half at the time that you serve it.
