chicken and dumplings my way

I have been wanting some chicken and dumplings for a while now and finally decided to make a pot today. It is one of the things I cook that I've been complimented on in the past. And it is simple, a few ingredients, all easily obtained if you don't have them handy, very little prep, and only one pot.

So while waiting for the chicken to cook some more, I'll share the basics with you. You can add or change as you see fit, but this is what works for me.

I start with a package of 4 thighs, pull the skin and most of the fat off off them. One or two cans of chicken broth, and if I don't have enough of that, maybe use bullion instead, or chicken base. But be careful. Both of these have a high salt content. Do not add any more salt till you have tested it. A stalk or two of celery, depending on how big a pot I'm making, about a half or a little more of a medium onion, both diced real fine, and sauteed till the onion is about clear. A little garlic powder, not salt, some sage, and let boil till the chicken is done.

Now you can leave the pieces whole, or de-bone them. Use your favorite baking mix, and mix the dumplings as per directions, put on top and cook till they are done. Nothing hard about it, tho to get the taste you want you can adjust the seasonings to taste, or add something else. This is only the basics of how I do it, but it works, usually. I have had one pot that the baking mix was too old and the dumplings tasted horrible.

And with the cold we are having, a hearty meal like this can help keep ya warm, as well as give you time enough to play on the computer too, lol.

Sounds a lot like my grandmother's chicken pastry except you mix and roll out the pastry and cut it into strips. That stuff is good on a day like today.

You need to get yourself a "little chief" smoker. Put the chicken in it for an hour with apple tree wood chips prior to cooking it. We use ours every chance we get. It also helps to defrost frozen meats while it smokes. Plus it takes less time to actually cook the meat.

I like to add parsley and garlic to my dumplings. It helps to season the stew and makes the dumplings even more yummy.

YUMMMMM!!! I love chicken and dumplings!! I do like RJ's Grandma and roll mine out! And I use a can of cream of chicken soup or chicken broth, depends on which I have on hand.
