Dione's blog today got me to thinking about food. You see I'm a foodie also. Guess it comes with the territory, lol, I've worked in the food industry for 30 or so years. I've been a cook, dishwasher, manager and general manager of two stores at once. Not an easy task, let me assure you. Now I'm an out of work restaurant manager, have been for almost 10 months now.
Today I was thinking about what I wanted for dinner, and decided it's been awhile since I made an old fashioned country dinner. So I got busy cooking; after I cleaned my house, and made a big country dinner any house maiden would be proud of. We had cornbread, fresh buttered squash with onions, home made creamy mashed potatoes (none of that boxed stuff for my family), field peas with snaps, meatloaf, fresh white corn on the cob, and sliced tomatoes and onions. A meal set for a king, a country king that is.
Got plenty of left overs, you see there was supposed to be friends coming over for dinner, but they had unexpected company pop in and couldn't make it. Anybody want to drop by? I'll even make some sweet tea and add a big slice of lemon. Might even make a lemon ice box pie for dessert.
So, drop on by Dana's Country Kitchen and make yourself at home. Might as well undo that belt buckle, cause I usually make big plates for my guest.

lemon ice box pie for dessert. Well Northern Dayna wants to know from Southern Dana was a lemon ice box pie is? Maybe its something that we make here, just call it by a different name.

field peas with snaps Ditto on Dayna's question along with...what a field peas with snaps? I am so not southern or country.... The squash sounds different and yummy. Having all those veggies does...I'd probably skip the meatloaf (and I wonder why I am anemic?) But, then, I like my veggies....

Lemon ice box pie is made out of sweetened condensed milk and lemon juice and egg yolks, then put in a graham cracker crust. I don't know what else it would be called. Field peas with snaps would be crowder peas with the young peas snapped in the pan like green snap beans. I didn't know that there was such differences in the names of food from north to south. lol
Yes, got plenty of left overs, but I'm sure it won't last long. Usually when people find out I'm in a cooking mood I have lots of company. My friends always looked forward to my off days when I was working, they always knew I would cook big meals and they would all be invited over to eat.
Don't think email would carry a slice of my pie, but I'll try. How's that?
Comet, thanks a million, I usually have to clean up the mess myself, my friends don't like to do dishes, but don't worry, I clean as I go, it goes with the business I guess. I've always done it.

I remember the second day I was in New York I went into a diner and ordered bar-b-que and was very confused when I got beef with some kind of tomato sauce over it. LOL I thought they had brought me the wrong plate. Southern food taste great but can sure put you in an early grave as a lot of cooks I knew fried fatback and seasoned the vegetables with the drippings from the pan. Taste great but no wonder there are so many heart attacks in the south.

Field peas with snaps would be crowder peas with the young peas snapped in the pan like green snap beans. And I am still lost! Can you tell I really don't know my way around food? I have never heard of crowder peas. There are few veggies I don't care for (cauliflower, black eyed peas, radishes) but usually it comes down to the way they are prepared...ham hocks & beans, canned veggies, veggies in stews & roasts, etc. I finally figured out that it wasn't veggies but that they were over cooked and mushy. Unless crowder peas fall into that category, I'm sure I would enjoy these...even if I have no clue as to what they are!
