Anyone up for some grillin' & chillin?

Well, I am... Here's a glimpse into what I've been doing today. Ya'll are invited to join me around eight this evening. Sure hope somebody has some good music on tap...

I'm a Southern gal who LUVS bar-b-que (BBQ)... Whether it's BBQ chicken, BBQ shrimp, BBQ beef brisket, BBQ fish... I could do a Forrest Gump litany on how many ways to do BBQ, but I digress. My most favorite BBQ is baby back ribs!

When I received my SAVEUR magazine back in January my mouth fell open... I moaned and salivated on the spot. On the front cover was the most decadent display of RIBS I could ever imagine. That's when I knew winter was over and spring had sprung into full force for my taste buds.

Another favorite of mine is Hawaii—the people, the location, the scenery, the cultural diversty, the spirit of Aloha and the food! So there's no way I could go wrong combining my two faves which resulted in Hawaiian-Style BBQ Baby Back Ribs.

In order to fulfill my food fantasy I went, no I ran to the market and filled my cart with all of the ingredients I needed to prepare the baby back ribs. My marketing list also included items to complete the meal—Texas Yellow Cold Slaw, Butch's Baked Beans and Grilled Pineapple. I was literally prepared to go whole hog (pun intended - LOL) on this one! Recipes for Hawaiian-Style Pork Baby Back Ribs follow plus the Cold Slaw and Butch's Baked Beans.

After all of my list making, marketing, shoppin' and all of my cookin', it's time to kick back with an ice cold Shiner Bock beer. So if you wanna to kick back and chat for a spell come on an sit a spell... the beers on ice, a few bottles of wine are hangin' around and I'll be fixin' a pitcher of gin or vodak martinis before the night is over...

Hawaiian-Style BBQ Ribs Soy Sauce-Marinated Ribs
Serves 4-6
These pork ribs are a sweeter version of a Korean preparation for marinated and grilled short ribs.

* 1-1/4 cups light brown sugar
* 1 cup soy soauce (I use light soy)
* 1/4 cup water (I use Kona coffee instead, any rich, dark roast coffee is fine)
* 1 tbsp. Asian sesame oil
* 4 - 6 cloves of garlic, finely chopped
* 1 2" piece peeled ginger, finely chopped
* 3 lbs. pork baby back ribs
* 3 scallions

1. Whisk together brown sugar, soy sauce, sesame oil, chile flakes, garlic and water (coffee) in a large bowl. Add ribs and toss to coat. Cover bowl with plastic wrap and marinate for at least one hour at room temperature, or refrigerate overnight, turn occassionally to coat.

2. Heat oven to 450 degrees. Remove ribs from marinade and arrange, curved side up, on a rack set over a rimmed foil-lined baking sheet. Roast for 20 minutes.

3. Meanwhile, heat the marinade in a 2-qt. sauce pan over medium-high heat and simmer, stirring occasionally, until thik and syrupy, about 20 minutes.

4. Using tongs, flip ribs and cook basting frequently with the reduced marinade, until the ribs are browned, glazed and tender, 15-20 minutes. Transfer ribs to a platter and garnish with scallions.

Texas Yellow Cold Slaw

* 1/4 cup cider vinegar
* 2 tablespoons dark brown sugar
* 1/2 teaspoon celery seed
* 1/2 teaspoon ground turmeric
* 1/4 teaspoon ground ginger
* Pinch of ground allspice
* 1 small onion, grated
* 1/2 small head cabbage (a combo of green and purple is good), coarsely chopped
* 2 kirby cucumbes, peeled, seeded and diced (if you don't care for cucumbers use grated carrots)
* 1/2 green bell pepper, coarsely chopped
* 3 tablespoons olive oil
* Salt and pepper

In a medium saucepan, bring the vinegar, brown sugar, celery seed, turmeric, ginger, and allspice to a boil over medium-high heat. Stir in the onion, remove from the heat, and allow to stand for 5 minutes to cool.

Meanwhile, toss the cabbage, cucumber and bell pepper together in a serving bowl. Whisk the olive oil into the cooled vinegar mixture until combined. Pour the onion-turmeric vinagrette over the vegetables and toss to coat. Season, to taste, with salt and pepper. Chill covered in the refrigerator for at least one hour to allow flavors to develop.

Butch's Baked Beans

* 1 (28-ounce) can baked beans (recommended: Bush's Baked Beans)
* 1/2 small onion, diced
* 4 - 6 ounces small diced pancetta (or bacon)
* 1/4 cup ketchup
* 2 tablespoon spicy mustard
* 2 tablespoons brown sugar
* 2- 4 tbsps of your favorite salsa (optional - this is my personal addition)

Put the pancetta in a frying pan and cook until crispy. Remove from pan leaving drippings. Add diced onion and sautee until tender. Put pancetta back into pan and add all of the other ingredients and stir well. Add ketchup, mustard, salsa and brown sugar. Heat over medium-high heat 5 minutes or until it bubbles.

OH YUM!!!! This former little Texas gal would love to join you!!! I'll bring some ranch style beans flavored with fatback and some yellow potato salad and corn bread for variety! Boy! That sounds great. I'll drink my wine out of a regular glass also, no need for the fancy stuff with this meal.!
PS I'll keep my clothes on so we can invite everybody.

Hey visualone, the more the merrier... I love yellow potato salad! Folks can bring whatever they like to add to the grazin'. You will disappoint a few by leavin' your clothes on, but do what's best for you - lol!

Forgot to mention... there's an extra large ice chest and ice, so ya'll can bring beverages of choice.

There's a local company that makes some if you can find them in your area... Cades Cove ribs............OMG!!! They are THE BEST!!!!!!!!!!

After his Super Bowl performance, I have my doubts about Springsteen still being "The Boss", but I do think he has a wonderfully cool first name.
This one fuses blues and Jazz. It is probably my favorite as it appeals to my sleazy side and brings back memories of fabulous cheap thrills.

Thank you WoW! I also found one that is a tribute to Bo Diddley after he passed away, I think last year. This is George Thorogood and as well as they do it, It ain't Bo Diddley! This song I had on a tape of 4 songs each looped to last longer to make a 10 minute set on stage. This one, "Who Do You Love" (Bo's original version) was the last one for this set. I will share with all of you what was happening when this came on my tape. By the time this started I was wearing high heels and a big smile and shining in the colored lights from the sweat covering my body. My long black hair was flying with my head going one way and my boobs and but going different directions and I was having a ball, high stepping and getting all my body parts moving with the music while the crowd was screaming applauding and howling for me. Now any of you ladies, before you say "Harumph!", you ought to try it and feel the power you have at that moment! I loved it!
Enjoy this and picture me on that stage if you wish and you'll understand while you chow down on all this great food! Maybe I'll do it for ya'll tonight!

It takes me a while, but I get around to requests usually. Mr. B. B. King, three versions of his best known tune, The Thrill is Gone.

The first version isn't all that technically good, but it has a story behind my posting it. Earlier this month I went to see my declining 88 year old father. I had pondered what I could give him to make him happy. My idea was to cut my hair that included a six inch pony tail. it was kind of funny.

I need to set his response up by saying that the little town that he grew up in, in Cali, had Soboba Indian reservation at the end of town. These people were a primitive tribe that were "gatherers", not more advanced like the tribes of the plains who rode horses and hunted buffalo with bows and arrows. I remember as kid seeing them with their long hair. That is the context in which he quipped upon seeing me with a broad gin, "I like that haircut! How does it feel to be a white man!?!"

His octarian female cousin was appalled and stared at him mortified. Well, the men of the Soboba tribe still have long hair and SUVs, palatial homes, and a casino to pay for it all. Here is B. B. King live at the Soboba Casino.

I am going to put up one more set before breaking away for some real world dinner. Just got done munching on a turkey and cheese wrap while watching a war movie. In the movie, they are just talking and nobody is getting killed, so I thought I would check in. Haven't missed miss I guess. I'll check back in sporadically and see if any peeps return.
