I want to fix a dinner that will knock her socks off, something that will melt her, maybe even get her to push onto the kitchen table and eat me all up.
I am a descent cook. I do chicken and vegetables pretty good, but I do that all the time. Any suggestions for: Appetizers?
Main coarse?
Desserts?
Maybe I should offer a prize to the one who comes up with the suggestion that I use. Suggestions for the prize?

Stuffed mushrooms sound really good right now... Someone mentioned steak the other day...rib-eye with bleu cheese butter... Salad...eggplant...artichoke maybe... Dessert? got to think on that one....

This is always a fun question - one I've dealt with many times!
'Finger food' is always fun - and can be sexy as hell. Appetizer? I'd say shrimp, chilled, with cocktail sauce. Friendly, casual, yet elegant. With a good white wine, of course. My recommendation would be a Firestone Riesling or a Chenin Blanc - mild, easy-going and a great blend with food.
White grapes, simply rinsed and ready on-hand for anything, any time. Can't miss.
A simple salad, greens with a tiny bit of flair. A little cheese and/or bacon bits (real ones, please - no tooth-breakers).
Break out the grill for a couple of steaks. You're a man; grilling is your domain. Steak says you're not cheap and you're looking to please both (yes, you, too) - not just looking to impress her! A nice red wine to go with the steak - personal favorite would be Claret, smooth and fruity with no dusty feel to the palate.
Background music - easy, rockin' blues. Something with a pulse-like beat, not lethargic, yet not overpowering. "I'll Be The One," by Boz Scaggs, is a great example! Sets a great mood for delving into the 'main course' with no rush!

Salad- start with mixed dark greens- lots of romaine and leaf lettuce. Add chopped walnuts, finely diced swiss cheese, and a red vinaigrette. Toss in a large bowl.
Main course- 4-8 (depending on size) pork tenderloin medallions. Put enough vegetable oil in a pan to coat the bottom of it and turn the heat up to high. When it feels hot when you put your hand over it, put the medallions in- it should sizzle and pop immediately. After two minutes, flip them. After another 2 minutes, flip them again. Turn the heat down to medium-low. Pour balsamic vinegar, a little red tabasco or other red chile sauce, a pinch of minced garlic and orange zest on them each time you flip them from now on. Finish cooking them on the lower temp, flipping them at least every 3-4 minutes and repeating the coating until they're white all the way through.
Side- kickass mashed potatoes. one and a half pounds of potatoes. Bring water and a little salt in a pot to a rolling boil. Put potatoes in, and let them boil for about 20 minutes. Drain out the water. On low heat, cook the potatoes, dry, in the pot for about 3 minutes, turning them once. Mash using a regular masher, fork, or potato ricer. Put mashed potatoes in a large mixer. Add in 1 cup half & half, 4 tablespoons of butter, 3/4 cup shredded cheddar cheese, 1 tablespoon ground chipotle pepper, and just under a teaspoon cumin seed. Mix until it's all a smooth consistency.
Dessert- mini-jalapeno cheesecake. 1 warm 8-oz pack of cream cheese. 1/2 cup sugar. Whip cheese and sugar until sugar appears dissolved. Add 2 eggs, 2/3 cup sour cream, 1 teaspoon lemon juice, a couple drops vanilla extract. Whip until completely smooth. Add 1/4 cup diced jalapenos and mix. Bake in a metal pie pan at 325 for about 18 minutes, then do the toothpick test about every 3 minutes until it's done. Chill before serving.

That kinda depends....... is this a first date? First time at your place? Are you already intimate, or are you hoping this break the ice??
First off, if you can cook, that in itself will impress her. Keep it simple. Don't try to do so much that you end up messing up one while the others are cooking.
My standby for melting the ice is building a fire in the fireplace. Have some Kenny G or other soft Jazz playing in the background. Crack open a bottle of wine, or whatever her drink of choice is. You can relax and get aquainted for a hour or so while you build up some coals. The meal consists of 3 parts. 1) Salad, already prepared ahead of time and chilling in bowls. 2) Sweet potato's wrapped in foil and ready to bake in the coals 3) Steaks propery seasoned and ready to grill over the coals.
The potato's will take about 35 min or so and you put them directly in the coals under the grate. When you are down to about 10 min left, I put the steaks in a wire hamburger basket, like you'd use over a campfire. The coals cook very hot and you can do a steak in about 8 min. (4 per side) This never fails to impress.
