Somethings missing, but what?

For those of you who know me well, you already know that I enjoy cooking and that I really enjoy creating new things in the kitchen.

For the last few times I have made what I am calling - MAN Salad

Typically it is

1/2 of a large vadalia onion

6 or so medium potatoes chopped WITH SKIN

1 red chillie pepper (medium size)

2 pinches paprika

2 pinches Sea salt

2 pinches Chilli Powder

3-4 pinches (1 tsp) FRESH black pepper!

2 tsp "italian seasoning"

1 - 2 tbs butter

Some type of meat

Place everything but the meat in a pan, I use a pan / pot. Sorta like a frying pan but it's 3 inches deep. Cover and cook over medium heat and stir / flip occasionally. While this cooks, I brown the meat. Once I used hot sausage, this time it was frozen hamburger patties chopped up, but the first time it was hot dogs chopped up, and that was too greasy!

Once the meat is somewhat cooked and the potatoes are starting to get soft, add the meat to the deeper pot with the rest.. Finish cooking untill potatoes are cooked and the meat is finished, place in deep dish and cover in shreaded chedder / montery jack mix cheese. I microwave after this to get the cheese melted through.

When I made it with the sausage it was OK but WAY too spicy for most people to enjoy and the hot dogs made it WAY to greasy...

It was just a little blah.I think the burgers are the ticket but what am I over looking? There was nothing jumping out at me for flavor. Thinking about skipping the cheese and using a tomato paste / sauce. Hmmmmm

Rosemary? Thyme? Any ideas? Please help!

It kinda looks by your ingredients that you are making some sort of meat potato salad thats really hot like chili, or you are trying to make a taco salad with potatos. I realize you are being original and experimental. The chili powder is negating the italian seasoning. The reason anything gets greasey is that you are cooking the meat with everythingelse. (if I read you right). Cook the meat seperate always. Drain the grease before you add your ingredients. I am not able to tell you what you are missing, but getting rid of the grease will help. Have fun, and it is always good to experiment!

I would be adding about a cup of hot salsa to the mixture and let it continue to cook until meat and potatoes are done............topped off with the shredded cheese and a little dollop of sour cream.........maybe even a few black olives if you like them...........

dangit! clickedanad2 is on to something with the garlic! Cant believe I forgot to use it!

Hmm that salsa sounds killer too! Maybe a few crushed up taco shells in the mix after it's all cooked up

Try Johnsonville brats as your meat choice. Take the skin off and cook it with some margarine. After it's cooked or you're ready to mix it with rest put it in between a couple paper towels to get the grease out.

have you ever tried to bake it w/ the cheese on top or try the cheese w/ the salsa in it cannot remember what they call it ??
