Yesterday Maggie expressed to me her love of mushrooms and asked me to create a simple dish using mushrooms for her (while the pink oyster mushroom are not simple to find) any type of mushroom maybe sustituted , if you use portabello you must use a spoon to remove all the black fins underneath as the smallest amount will turn the sauce black that being said this is a simple dish one pan 15 minute preparation time
Also just for you Maggie i used pink oyster mushrooms to make this dish unique as you are
PINK OYSTER MUSHROOMS STROGANOFF MAGGIEMAE
1lb pink oyster mushrooms(tough stem removed) 3 large shallots(peeled and finley diced) 2 teaspoons grainy mustard 1/2 cup chicken stock 1/4 cup good (drinkable lol) red wine 3 tablespoons sour cream fresh thyme picked and chopped salt and pepper to taste extra virgen olive oil stem the mushrooms brush off any dirt on them with a dry towel heat a large sautee pan on med high heat ....when hot add the extra virgen olive oil .......quickly add the mushrooms ......salt and pepper... before the olive oil starts smoking..........add the shallots.........cook everything until the shallots are clear .........add the red wine turn the heat up to high reduce the liquid by half ..........add the chicken stock once again reduce by half ...........add the mustard and 2/3 of your thyme.......reduce heat to low cook for five minutes than add you sour cream cook till just incorperated and sauce is creamy.......plate it up ....sprinkle with raw extra virgen olive oil and reserved thyme .............enjoy Maggie

morrels happen to be my favorite mushrooms here is a littlte trick with them being morels are hollow take a little ground veal some heavy cream salt n peppa fresh herb tarragon is good, work it all together till smooth place in a pastry bag with a small tip and pipe into the morrel than sautee in the dish with extra chicken stock to allow more cooking time b4 finishing i love this
